Mexican Bubble Pizza


This nifty little recipe is one I found on Taste of Home and I realized how kid friendly this would be as far as making it. Other than browning the hamburg, the kids can take over this recipe and cook like bosses! The fact that it’s a pizza recipe is just the icing on the cake.

This recipe was also originally a crock pot meal, but I adapted it to just bake in the oven. I cut down the hamburg from 1.5 lbs to 1 lb and switched out straight cheddar cheese for Fiesta Blend. The result was delicious and a hit with the family. My lovely assistant Megan made this under my guidance and loved every minute of it.

So, let’s get cooking!

Brown the hamburg in a skillet until thoroughly cooked.


Add and stir in the tomato soup, water, and taco seasoning. Simmer for 3 to 5 minutes until thickened. Remove from heat.


Open refrigerated biscuits and cut each into fourths.


Mix the cut biscuits into the beef mixture.


Place the whole shebang into a greased 9 X 13” baking dish and sprinkle the cheese over all.


Bake at 350° for 30-35 minutes until biscuits are cooked through.

¾ c water
1 packet taco seasoning
2 sm tubes refrigerated biscuits
2 c shredded Fiesta Blend cheese

Pizza Part 20: Chicken Fajita Pizza



So, here we are again with another pizza. I can’t help it; I love pizza! If I had the chance to open a restaurant, my top choice for what kind would most likely be a pizzeria. No big surprise there, huh? This recipe is one of my originals. I decided to try making it one night when we were thinking of making pizza for supper and I wanted something different than the usual. I looked up the basic ingredients for fajita seasoning since I didn’t have a packet of it on hand, then adjusted it to my liking. I’ve heard that it’s less expensive to make different seasonings yourself, which I want to do at some point, but there’s nothing wrong with using a pre-packaged one from the store. Anyhoo, I hope you like this. ☺

So, let’s get cooking!


First, cut up the chicken breast into smallish pieces, about ½ inch squares. Place it in a bowl and add the fajita seasoning, store bought or homemade. In a skillet with a little oil (1-2 Tbl), sauté the chicken cubes until just done and tender, then set aside.


Now for the sauce: In a smallish sauce pan, melt the butter and add the flour to make a roux. Whisk in the milk, stirring continuously until thickened. Toss in the sugar and sriracha sauce and set aside to cool.


Dice the tomato and slice the onion and green bell pepper into pieces about an inch long.

Spread the pizza dough into the greased pan, and then spoon the sauce on and spread around. Sprinkle the mozzarella cheese on top, then the fiesta blend. I almost always use at least some mozzarella because I love that cheesy stringy yumminess!


Distribute the onion and pepper slices, then the tomatoes and chicken. Bake at 425° for 18 minutes exactly. The underside of the crust will be a beautiful golden brown.

Chicken Fajita Pizza

 pizza dough
1 lg chicken breast
1 packet fajita seasoning
*OR make it, recipe below
1 c milk
3 Tbl butter
2 Tbl flour
½ tsp sugar
1-2 Tbl sriracha sauce
1 lg tomato
½ lg green bell pepper
½ lg Vidalia onion
1 c shredded mozzarella
1 ½ c fiesta blend cheese







Fajita Seasoning

2 tsp chili powder
1 tsp cumin
1 tsp paprika
½ tsp cayenne
½ tsp garlic powder
1 tsp sugar

1 tsp salt

Pizza Part 19: Valerie's Calzone Pizza


So, here we are again with another of my original recipes. Have I ever mentioned that I love pizza?? Oh my, how I love pizza! It’s one of my four food groups. ;-) I have eaten it for breakfast, lunch, and supper, and can never get enough. This pizza came about one night when I was going to make my calzones for supper, but Timmy had said he wanted pizza instead. I had thought of making a small pizza for him and calzones for the rest of us, but then inspiration struck and here we are! ;-)

So, let’s get cooking!



Cut up the sliced ham into small squares, about ½ inch square. Dice the onion and chop the mushrooms a little bit.

Grease your pizza pan with Crisco and spread the dough to fit. Sprinkle on 2 c of the shredded mozzarella cheese.

Place the sliced pepperoni---you can use one layer, two layers, whatever you want. Personally, I prefer 2 layers of it.


Spread on the little cut squares of sliced ham. Add the diced onion (we like a LOT!) and then the mushrooms.

Confession time: The next step is to sprinkle on the remaining 1 ½ c mozzarella cheese, but I failed to take a pic. I commit this error sometimes, and this was one of them. But go to the next step and you can see for yourselves that this is a VERY cheesy pizza! ;-)


Bake at 425° for 18 minutes exactly. The crust underneath should be golden brown and scrumptious!

Pizza Part 18: Loaded Steak Pizza


I *love* steak. We rarely have it due to how expensive it is, but I love it and if we get a gift card for a restaurant, usually I’ll order steak. I love mine rare, and loaded with sautéed peppers, onions, and mushrooms. Just thinking of it makes my mouth water!

So anyhoo, one night when I was going to make pizza for supper and throwing ideas around in my head for making up a new pizza, I thought of steak with all the extras on top, and thus my Loaded Steak Pizza was born. It took a few tries to get it to where I was satisfied it was perfect, and I hope you enjoy it.

So, let’s get cooking!






Set the frozen Philly steak on to cook in a large skillet or griddle, depending which brand you use. When done and cooled, you’ll want to make sure it’s pulled apart either by hand or chopping with a knife.












While that’s cooking, prepare your veggies: slice the onions and peppers into 1 inch lengths. Use whatever color you have on hand, but I love using green, red, yellow, and orange. Peel and mince the garlic.









Mix together the A1 Steak Sauce and mayo. Now, here’s a decision you need to make: do you want to add the minced garlic to the sauce, or would you rather struggle with sprinkling the sticky little varmints on top along with the vegetables like I did? It’s your choice. Make the right one. <whispers: put it in the sauce!>










Now, spread the pizza dough in the greased pan. Spread the sauce mixture on top, and then sprinkle the shredded mozzarella and Monterey Jack cheeses on.











Distribute the lovely assortment of bell peppers on the pizza…..















…..and the sweet Vidalia onions, along with the mushrooms.











Now for the tender shaved steak, and you’re ready to bake! You know my rules for making homemade pizza and calzones: 425° oven for exactly 18 minutes and not a minute more. ;-)

Serve up and savor the flavor.

Loaded Steak Pizza

1 pizza dough
½ green bell pepper
½ red bell pepper
½ yellow bell pepper
½ Vidalia onion
1 huge clove garlic
1 c sliced mushrooms
7 oz Philly steak (frozen)
1 c shredded Monterey Jack cheese
1 c mozzarella cheese
½ c A1 Steak Sauce
2 Tbl mayonnaise

Pizza Part 17: Spicy Shrimp and Asparagus Pizza


This is one of my original pizza recipes, and I have to say, it came out so stinking good that it was what everyone wanted. I make two different sheet pans of pizza when I make it, and while the other was very good, the Spicy Shrimp and Asparagus Pizza went like hot cakes off the griddle! I may have to just make two of them at a time from now on. By the way, I used only 1 tsp of sriracha in the sauce, but that was because Timmy and Megan don’t like things too hot; add an extra tsp of it if your family likes it spicier. Also, I would have thrown some red pepper flakes on top too, but didn’t for the same reason.

So, let’s get cooking!



You’ll want to steam the asparagus a little, so cut into pieces about an inch long. Place in a bowl with a small amount of water, cover with plastic wrap, and microwave for about 3 minutes.

While that’s going on, mince the red bell pepper finely.


Time to make the sauce! In a small sauce pan, add the cream cheese, milk, minced red bell pepper, garlic powder, black pepper, and sriracha sauce. Cook over low-ish heat to melt the cream cheese, stirring often. Stir in the parsley flakes. Allow to cool for a few minutes.

Spread the pizza dough on the greased pan, and then spread the sauce evenly on top. Sprinkle on the shredded mozzarella and pepper jack cheeses.


Distribute the asparagus and shrimp. Bake at 425° for 18 minutes. And now, dig in! Enjoy! ~TMMF



Spicy Shrimp and Asparagus Pizza 

1 pizza dough
½ lb asparagus
9 oz cooked shrimp, extra small
8 oz cream cheese
2 Tbl milk
¼ c minced red bell pepper
½ tsp garlic powder
1-2 tsp sriracha sauce
2 tsp parsley flakes
¼ tsp black pepper
1 c mozzarella cheese, shredded
1 c pepper jack cheese, shredded

Pizza Part 16: Valerie's Cheeseburger Pizza



Cheeseburger Pizza…oh my! The first time I had one was years ago from Domino’s. It had the meat, hamburg and bacon, lots of cheese, and some kind of sauce that wasn’t on other pizzas. It was really good, and I thought I liked Cheeseburger Pizza.

Enter Papa John’s Double Cheeseburger Pizza: hamburg, tomatoes, and pickles. What? Pickles on a pizza?? Oh, Mylanta, is it ever good!!

We ordered the Double Cheeseburger pizza several times from Papa John’s, and though we always ordered another pizza that everyone liked, the Double Cheeseburger ran out first. It’s that good.

So, of course I had to make it. Besides the fact that their Double Cheeseburger pizza isn’t a menu regular, I knew I could make it for less, and I knew how to improve it. The only thing I wasn’t sure about was the “zesty burger sauce.” But hey, I don’t mind playing around a few times with it and discovering what works. Hehehe ;-)

What came out of all the experimenting was what I’m presenting to you now. My family loves it and out of all the pizzas I’ve created or “copycatted,” this is way up on the list of my favorites. I think you’ll love it too.

So, let’s get cooking!


Prepare your veggies to meet their Maker: slice the pickles thinly, dice the tomatoes, and slice the onions. I halved the onion, then laid it on the cut side and sliced it, then cut the slices into thirds or fourths.

Grate the cheddar cheese and the mozzarella if you bought it whole. I haven’t bought a block of mozzarella in years because the price for shredded is lower. Hey, less work for me! ;-)

Mix together the mayonnaise and ketchup for the sauce and set aside.


Spread the pizza dough on a greased pan and then spread the sauce on it. Sprinkle on the mozzarella cheese, and then place the pickles on top.


Next, dole out the onions, the diced tomatoes, and the browned hamburg or ground turkey. I have used ground turkey every time because I can’t afford hamburg, and the family never knew any difference.


Lastly, sprinkle the grated cheddar cheese on top of all. Bake in a 425° oven for 18 minutes, and you’re ready to go!

Pizza Part Quince: Spaghetti & Meatballs Pizza



So, who’s up for pizza? I always am! One night I was thinking of how some places have macaroni and cheese pizza, and while I love mac & cheese, I didn’t want something that seemed kind of bland. And quick as a wink, Spaghetti and Meatballs Pizza popped into my mind. So I made it. ;-)

Now adding another carb to a pizza crust, well that’s not setting well with me lately, so what I did was make a small amount of spaghetti for it, and it seemed just right. The meatballs I used were from a batch Megan and I made and froze in meal size portions. All I had to do was defrost them and Megan cut them in half. So, let’s get cooking!



Chop the onion and pepper, and mince the garlic. In a medium saucepan, mix together the crushed tomatoes, onion, pepper, garlic, and spices. Bring to a boil and then turn down to simmer for 15-20 minutes.


Meanwhile, break the spaghetti into thirds. I took a handful of the dry spaghetti and broke it, filling a half cup measure. Just “guestimate” the amount. Cook until just tender. Mix a small amount of the spaghetti sauce into it.


Spread the dough in the greased pizza pan. Spoon on the sauce and spread. Sprinkle on the mozzarella cheese.

Take the spaghetti and sort of drop it on top of the pizza evenly. I used my hands; it was just easier that way. Then add the meatballs, sprinkle Parmesan cheese over all, and it’s ready to cook!

Bake at 425° for 18 minutes exactly. Enjoy! ~TMMF

Spaghetti & Meatballs Pizza

1 pizza dough
Small meatballs, about 15-18
1 15 oz can crushed tomatoes
¼ green bell pepper
¼ onion
1 clove garlic
½ tsp oregano
¼ tsp basil
¼ tsp thyme
About 1 oz dry spaghetti
2 c mozzarella cheese
Parmesan cheese

Pizza, Part 14: Stuffed Crust Pizza



Stuffed Crust Pizza….ever since the pizza places came out with it, I’ve loved it. It’s always so much more expensive than the regular crust, so you know I had to try and recreate it. ;-) It took me a few tries to figure out the best way to do it, so the cheese would stay inside the crust, but I finally got it. I think you’ll really like this one. And I put ground meat on mine with a couple veggies. Use whatever you want, but I’ll show it the way I made it.

So, let’s get cooking!






In a skillet, sauté the hamburg or ground turkey until cooked. I generally use the ground turkey because I can’t afford hamburg unless it’s on clearance. ;-) When done, set aside to cool.












Meanwhile, chop the vegetables you plan on using.













Spread the pizza dough on a greased round pizza pan. The one I have is a 15” diameter pizza pan. You can find my pizza dough recipe here. Spread the dough evenly, all the way to the edge.












Taking the mozzarella sticks, place them about half an inch from the edge of the dough, with the sticks end to end.











Start folding the dough over the mozzarella sticks and roll it a little bit more towards the middle of the pizza dough. Press down the dough on the inside side of the sticks, to seal it good.










You have to kind of keep the sticks end to end with no spaces in between, and kind of curve them the best you can. It’s not going to be perfectly round, but the Geometry Police won’t be stopping by to measure. They don’t know where you live anyway. ;-)












Spread the sauce on the pizza and then sprinkle the cheese on top.














Top with the meat and veggies, or whatever toppings you’ve chosen.








Bake in a 425° oven for 18 minutes exactly, and you’re ready to roll. Enjoy! ~TMMF
